Bulong Estate Sauvignon Blanc 2017


Made from our original plantings, which are over 15 years old now, and our most elevated block.  The vines have a very deep root system and have found a plentiful source of underground water. 

Multiple pickings are conducting at different flavour profiles ensuring the final wine has layers of complexity.  Light skin contact prior to pressing adds to the flavour complexity. 

Fermentation is conducted in tank and bottling is conducted as early as possible in order to retain the wine’s freshness.

The wine displays multiple layers of complexity, with a hint of cut grass, gooseberry and passionfruit on the nose while the palate is lush with tropical fruit characters.  Crisp natural acidity ensures it finishes long and clean.

Ideal as a chilled aperitif it is also an excellent food wine, matching to fresh seafood, especially oysters, particularly well.
